Apple leads — pressed orchard fruit, tart skin more than sugar, with a dry bite behind it. Juniper sits underneath, piny and firm, and the 42% keeps the fruit from turning into cordial. Finishes clean and slightly green, like a bitten apple core.

Tonic — Fever-Tree Indian Tonic Water, 1:2 — plain tonic lets the apple stay the loudest thing in the glass
Garnish — Thin slice of green apple

Why this gin — The tart apple in KIKU does half the work of the lemon, and 42% stands up to egg white and sugar without thinning out.
